Gluten Free Rice Noodle Stir Fry

Inspired by my friend’s Asian-inspired food blog, I decided to make a gluten-free stir fry with leftover BBQ Chicken and other ingredients I had on hand. These are some of my favorite gluten-free noodles; shaped in oval-shaped and very similar in texture and taste to Chinese ho-fun noodles.
- 3 cups chicken or vegetable stock
- 1 package rice noodles (Ovalettes are best, but any rice noodle will do)
- 3 cups baked or boiled chicken (leftover beef, pork or ground pork/turkey will also do)
- 1 cup celery
- a few stalks of green onion, minced
- one stalk chopped leaks (white of leeks)
- 2 cloves garlic, minced
- Olive, Canola Oil or Sesame Oil
- 1 tsp wheat-free/gluten-free soy sauce
Bring broth to a boil, add rice noodles. Cook according to directions, be careful not to over cook (or will be too mushy). Drain and sprinkle with Sesame oil so noodles will not stick.
In a wok or skillet, heat oil. Brown garlic and add in cooked meat. Add in leeks and celery until translucent, adding in soy sauce or salt for flavor. Add in drained noodles and stir fry all ingredients. Place on serving plate and sprinkle minced green onion for additional flavor and color.
Gluten Free Turkey Burger
After picking up a loaf of gluten-free bread from Good Chemistry Baking, I was inspired to make something yummy to eat with the bread.
Pictured here, my first attempt at making Gluten-Free Turkey Burgers. I used ground turkey (dark meat, not white), chopped mushrooms, died onions, minced garlic and fresh herbs.
A little mayo, sliced avocado and homemade barbecue sauce made for the perfect summer evening meal!
Gluten-Free Brunch

With Mother’s Day coming up this Sunday, what better way to celebrate with a delicious homemade gluten-free brunch. Pictured here, gluten-free French Toast, made from Farmer’s Kitchen Cafe’s baguette. Just soak in a few eggs, milk, cinnamon and grill in a pan. Serve with 100% pure maple syrup for a gluten-free, corn-free (no HFCS) breakfast! Add fresh OJ mimosas…. cheers!
